Spinach is one of the leafy greens I have ready to use in the garden right now. It’s also the only green my husband will eat in his salads.
Because of this, I don’t normally use spinach in my green smoothie recipes. I tend to use lettuce, chard or kale. Like I did in the cucumber kale smoothie.
But I had some fresh peaches and fresh strawberries on hand and I wanted to use them. So I went out to the garden and picked some spinach leaves.
The peaches were so ripe and juicy. I had originally only bought two. The big kid ate one and I used the other in a peach margarita. They were so good I went back the next day and bought a bagful of them. Those didn’t last long either.
Good thing the farmer’s markets are now open. I have a feeling I’ll be spending a lot of time (and money) there this summer.
The secret ingredient in this peach spinach smoothie is flax seeds. Flax seeds have a variety of health benefits. They have antioxidant, anti-inflammatory, cardiovascular and digestive health benefits to name just a few. It’s easier for the body to digest flax seeds if they are ground instead of whole. This can be easily done with a spice grinder right before you plan to use them.
Peach Spinach Smoothie
Makes 1 smoothie
- 1 organic peach, seed removed
- 5 organic strawberries, tops removed
- 1 cup organic spinach, washed
- 1 tablespoon flax seeds
- Coconut water
- Place all ingredients in a blender with ice.
- Pour in coconut water and blend to desired consistency.
- Add more coconut water and/or ice as needed.
- Pour into a glass and enjoy!
